At the laboratory, we research carbohydrates and carbohydrate-active enzymes to create bioproducts and polymers for various applications, such as biomaterials, food and nutrition, health, and vaccines. Specifically, we have developed a system for immunization through the mucosal route using polymeric microparticles in vaccines.
Traditional food fermentations are one of the primary sources of the enzymes used in our research. We study these using classical microbiology, biochemistry, and omics approaches. Additionally, these fermentations enable us to isolate and study probiotics.
